Consider staying a few extra days before or after the Workshop (ie ski on a weekday without crowds)
Colorado is home to more than twenty mountain resorts (Colorado Ski Country USA). If you want to get a sense of the slopes, try using Google Maps' street view. A number of the trails at several resorts (ie Winter Park) have been imaged in street-view panoramic form.
The four closest ski areas to Boulder:

RTD bus departs from 14th & Walnut RTD Station in Boulder, stops downtown Nederland, then drops you off right in front of the Main Lodge at Eldora where it leaves to go back at the end of the day. Fare is approximately $5 one way (?).

If you're flying from a low elevation, you may experience typical symptoms like headaches, fatigue or nausea. These symptoms can often be alleviated by spending a few nights at altitude before skiing, drinking extra water, eating complex carbohydrates, resting, and reducing caffeine, salt, and alcohol intake. Keep in mind that your skin can easily burn when you are skiing at a high altitude, so good sunglasses and sunscreen are a must. The weather can change quickly too. Dress for variable conditions.

The Ranch has more than 100km of groomed trails (skate and classic Nordic) nestled in the pristine and private Ranch Creek valley at the base of the Continental Divide, And they have snowshoeing too.

Winter is filled with Cross country skiing, Nordic races, tubing hill, snowshoeing, indoor climbing wall and swimming pool, custom activities for groups and families and so much more!
Many ski resorts provide addiitonal activities such as horse drawn sleigh rides, snowshoeing, cross-country skiing, tubing hills, dogsled rides, ice-skating or snowmobiling.
And there are a number of State and National Parks close to Boulder that provide access for hiking, skiing, climbing etc. Two notable examples are:

Eldorado Canyon offers hiking trails, hundreds of climbing routes, and more.
~1 hr drive
Beautiful, large alpine park, including Long's Peak (14,259' / 4,346 m).
